A passionate entrepreneur and lifelong learner, fuelled by the pain of 5 serious illnesses, Janice was born into a relentless journey, in search of how to move from absolutely Breathless to Breathtaking. Esthetic treatments, fitness training, fad diets and the latest neutraceuticals worked well momentarily, but none provided the sustainable transformation she was looking for. The accompanying diets were all boring and tasteless which led to a quick end, to their honeymoon periods. There was a piece of the puzzle missing to really make this work; a delicious compilation of guilt-free, gourmet recipes that just happen to be healthy.

A global sensation, with a precious collection of recipes to seduce the most discerning palate, in 2008 Janice founded the Raw Foundation Culinary Arts Institute. Canada’s premier Raw Food Education establishment, began providing the most comprehensive, gourmet, transformative 3 day nutrition and lifestyle Immersion Program; to foodies, health enthusiasts and healthcare practitioners, now with graduates hailing from 18 countries.

In 2010 Janice launched Breathless to Breathtaking Boutique Retreats, for brides, their wedding parties as well as those nearest and dearest to them.  Guests are privy to an exceptional experience: delicious, quick and easy, high energy, recipes, self care indulgences, movement and mindset mastery tools. A featured raw food chef and nutrition transformation expert at numerous live, TV and radio events such as Visions to Wealth, Rock Star Cooking, and Go! Figure, and seen in numerous publications, written up by National writers such as Food Critic Mia Stainsby, Janice is an actively sharing her knowledge and continues to study. A member of the Physicians Committee for Responsible Medicine and the Academy of Naturopaths and Naturotherapists, she is currently studying integrative healthcare and completing a doctorate in Naturopathy.

Her next book, “One Week to Glow” will be available winter of 2015 providing quick and easy solutions to look and feel your best without starvation or cosmetic surgery. Get Your Glow On

A sweet slumber regulates metabolism, regenerates all of your body and will have you waking up refreshed, with your glow on. With seemingly endless to do lists and ambient LED lit bedrooms, many bride’s to be, and their nearest and dearest, are not getting enough rest.

The Breathtaking solution: delegate some tasks from the master list, take a deep breath and relax; you and your team have got this.  As for the LED lights, cover them up and invest in blackout blinds and an exquisite eye mask; exposure to any type of glow during the night can suppress the beauty sleep inducing hormone melatonin by 50%, even though your eyes are closed.

 Turn Up the Heat

What if it was possible to boost your metabolism, reduce belly fat, decrease your appetite and improve your mood all at once; quickly and easily, just by turning up the heat? No-Bake Double Chocolate Brownie Cake

Cake

3/4C cashews, Navitas Naturals, really raw

7 Medjool dates, pitted

1/4C cacao powder, Navitas Naturals

1/2t vanilla bean powder

1/4t cayenne pepper

2t cacao nibs, garnish

Pinch of salt

1 strawberry, fanned (garnish)

Method:

  1. Process the cashews in a food processor, until fine.
  2. Add the remaining ingredients and process until smooth.
  3. Place the mixture onto a plate, form into a heart and set aside.

Icing

1/4 C agave nectar

1/4 C cacao powder, Navitas Naturals

1 T coconut oil, melted

Method:

  1. Process in food processor until smooth.

Assembly:

  1. Ice and garnish the cake.
  2. Place in the freezer for 5 minutes. Enjoy!

New York Style Lemon Cheesecake

with Triple Berry Coulis

Base:  Vanilla Shortbread Cookie

2C macadamia nuts

1 pinch of salt

1t vanilla bean

Method:

  1. Place all ingredients in the food processor and process until 70% combined. A light crunch to this cookie will create fabulous finish.
  2. Press the dough into the base of two 4” spring form pans.
  3. Set aside.

 

Filling

1 ½C cashews, Navitas Naturals, really raw

1C lemon juice

½C coconut sugar

¼C coconut butter

Method:

  1. Soak the cashews for 6 hours.
  2. Rinse the cashews and continue to soak and repeat rinsing them every 6 hours, for an additional 24 hours.
  3. Combine all ingredients in the vita-mix and blend until smooth.
  4. Pour the mixture on top of the cookie crusts, in the 4” spring form pans.
  5. Freeze for 6 hours.

 

Coulis:

3C berries

2T agave nectar

Method

  1. Reserve 1/4C berries or berry piece.
  2. Pulse remaining ingredients, in a small food processor.
  3. Pour mixture from the processor into a bowl and stir in the pieces that were set aside.
  4. Refrigerate until ready for service
  5. Spoon on top of cake. Enjoy!

Energy Elixir 

4C tightly packed spinach

4 bananas

3C filtered water

1t spirulina powder

5 Medjool dates, pitted

Garnish:

4 strawberries

Method:

  1. Blend all ingredients.
  2. Garnish your wine glass with a strawberry
  3. Pour the Elixir into the glass and energize every beautiful cell in your body!
